Stir fry Potatoe Salad with chicken

This is one of my favourite dishes to make. It’s a Stir fried Potatoe Salad with chicken. It’s my most requested dish for family and friend get togethers. It’s a dish I came up with a few years ago, because I don’t eat regularly potatoe salad, and when everyone comes over for a braai, they want potatoe salad. So I served up my own version which turned out to be a hit and I finally found a potatoe salad I love. It can be served cold as a side dish or I like to add some chicken and serve it as a hot meal for dinner. Find the recipe below and let me know what you think!

Ingredients
Baby Potatoes
Carrots
Coriander
Creamy mayo
Soya sauce
Ginger
Garlic
Spice for Rice
Onion
Mushrooms (optional)
Corn (optional)
Chicken (optional)
oil

Method
Microwave your baby potatoes to soften them
Fry onions, garlic and ginger in a little oil.

[Add chicken, a little spice for rice and a dash of soya sauce. Fry until done.
Add potatoes, mushrooms & corn] (these steps are optional).


Add soya sauce, and spice for rice to taste. You can also add some Sriracha for a spicy twist.
Add chopped up coriander and julienne carrots.
Bring down heat and add a generous amount of Creamy Mayo. Stir until it forms a sauce. Add more mayo or spice to taste.
Serve cold as a side dish or hot as a main. Add some fresh coriander and julienne carrots to serve.
